For the past month or so, I’ve been trying to focus on adjusting my diet for overall health, rather than just weight loss/maintenance. I’ve attempted to do this is to cut way back on carbs, and to eat less meat. As someone who survived college on multiple spaghetti dinners per week, cutting carbs hasn’t been the easiest. I’m trying to be creative, and with the help of endless recipes on Pinterest, I think I’m making progress. My new favorite type of meal involves stuffed veggies. I’ve been making sweet potatoes stuffed with raisins and walnuts, and drizzled with honey. I stole the idea from one of my favorite restaurants in Raleigh, Mitch’s. Tonight, we tried a stuffed onion recipe, and it was delicious! The recipe calls for hollowing out the onions and stuffing them with bleu cheese, bacon, and thyme, but we adjusted it a little. We used bleu cheese and bacon, but added in some sun-dried tomatoes, as well. The bleu cheese was a little strong, so I think if I make these again, I might do half bleu cheese and half feta. I’ll be on the lookout for more stuffed vegetable recipes in the future!
